Description
Thekua is a traditional deep-fried, sweet-flavoured crisp snack from Bihar made from whole wheat flour (atta). Desi Ghee Thekua of Mithilanchal is popular throughout Bihar, Uttar Pradesh, and the Terai region of Nepal. It is a revered prasad offered to the Lord during Chhath Puja. It is used as a sweet snack.
It is traditionally made with jaggery, making it healthy and tasty. If you want, you can replace jaggery with regular sugar or honey. While melting jaggery, grate it and use a very small amount of water. It is important to obtain stiff dough, which is necessary to prepare the right consistency, thickness and texture. Coconut, fennel and cardamom are also added to the thekua recipe to enhance the flavour, taste and aroma of thekua. Traditionally thekua is rolled, shaped and pressed into a wooden mold called sancha, which may be greased with ghee to prevent the dough from sticking, before frying.
This recipe will give you a crisp and crunchy exterior with a soft interior, which, to me, is perfect for a cookie. The edges of thekua are unevenly torn, making them both rustic and crisp. Thekua tastes great with spicy and bright pickles, suran pickles, and Mithila special mango pickles.
We have two types of thekua, with slightly different sets of ingredients:
Flour-Sugar Thekua: wheat flour/maida (refined flour), refined oil, fennel, cardamom, coconut, dry fruits, water or milk., sweet soda (baking soda), and sugar (sugar).
Flour-jaggery Thekua: wheat flour/maida (refined flour), refined oil, fennel, cardamom, coconut, dry fruits, water or milk., sweet soda (baking soda), and jaggery (jaggery).
